Roasted Garlic
To serve four to six
What you need:
A large garlic roaster
(They can be purchased
for less than $15)
One fresh baguette,
24''
Six jumbo heads of garlic
Small block of parmesan
cheese
Small wedge of danish
blue cheese
Olive oil
Fresh crushed black
pepper
To prepare:
Slice the tips of the garlic
heads off, just exposing
the clove flesh. Do not
break the heads apart. Place
the garlic tips up into
roaster, brush liberally
with olive oil, then dress
with black pepper. Bake
covered at 375 degrees for
60 minutes.
Prepare bread by slicing,
brushing with olive oil
and sprinkling with fresh
grated parmesan. Toast in
oven until light golden.
To eat:
Spread the clove on the
bread, then the blue cheese
and prepare to be addicted.
